Here we are 4 days into February and I have participated in 2 viral Tik Tok food trends. The first was the trendy tortilla wrap hack. You can check that out here. Today my friends, I have yet another delicious trend making it’s way all across my feed… Baked Feta Pasta with Cherry Tomatoes.

Apparently in Finland, this dish was so popular that grocery stores completely ran out of feta cheese at one point. The first time I saw this recipe was from Feel Good Foodie with original credit to Liemesa. I was scrolling through and didn’t really pay attention but it came across my screen again and I knew I had to try it.

Ingredients:

Tomatoes: Roasted tomatoes are beautiful to look at. It’s more than just being aesthetically pleasing in this recipe. Mini tomatoes are roasted to blistered perfection and provide so much texture in the feta cheese pasta.

Feta Cheese: Truly the star that makes this dish great is feta cheese. What makes this recipe so popular is using a block of feta cheese and placing it smack dab in the middle of a baking dish with the tomatoes. Although you can probably use crumbled feta cheese for the same end result it just doesn’t compare to the block style. Blocks of feta cheese are available at most grocery stores.

Olive Oil: This essentially holds the sauce together. The olive oil along with all the juices from the tomatoes after they are roasted makes a liquid that will help form this feta sauce.

Seasonings: You’ll need salt and pepper to start. Then some oregano to sprinkle on top of everything followed by a considerate amount of fresh basil. Other options for seasonings include fresh thyme which pairs well with feta, or red pepper flakes for more spice, or lemon zest for a bit of tangy.

Pasta: Any pasta you have on hand will do although this recipe used cavatappi pasta. Feel free to substitute with low-carb pasta options (like spaghetti squash noodles) or gluten-free pasta.

How to Make Baked Feta Pasta with Cherry Tomatoes

Preheat oven to 400°F. Place tomatoes into an oven-safe baking dish. Drizzle with half of the olive oil. Season with salt, pepper, and oregano. Toss to evenly combine. Create a space for the block of feta cheese in the middle and place feta in the baking dish. Pour the remaining olive oil on top of the feta cheese and add more seasoning to taste. Add cloves of garlic to the tomatoes.

Bake in the oven for 30-35 minutes or until the feta cheese is completely melted and the tomatoes burst. While baking in the oven, cook pasta according to instructions. The entire box of pasta was not needed for this recipe. When the pasta is cooked set it aside. Once feta is done remove from oven. Sprinkle chopped basil on top of everything. Use a spoon to mash feta cheese and tomatoes and mix together to form pasta sauce. Pour cooked noodles into the baking dish and use the same spoon to toss and coat noodles evenly. Use additional basil to top as garnish when served.

Questions

Can I use another type of cheese? While I I have not tested this recipe using other cheese I have seen videos using ricotta and goat cheese.

How long does this pasta last? Because this uses melted feta cheese this meal is best served immediately. If there are any leftovers store them in an air-tight container and keep them in the fridge for a couple of days.

What else can I add to this? Add a side of protein like roasted chicken, shrimp, or tofu. Pair with roasted veggies to balance this carb heavy meal out.

How can I make this pasta healthier? Use whole grain pasta noodles. Another option is for low-carb noodles to decrease the number of carbs. Make this dish gluten-free with gluten-free pasta.

  2. Create a space for the block of feta cheese in the middle and place feta in the baking dish. Pour the remaining olive oil on top of the feta cheese and add more seasoning to taste. Add cloves of garlic to the tomatoes by placing on the tomatoes.

  3. Bake in oven for 30-35 minutes or until the feta cheese is completely melted and the tomatoes burst. While baking in the oven, cook pasta according to instructions. Set aside.

  4. Once feta is done, remove from fridge. Sprinkle chopped basil on top of feta cheese. Use a spoon to mash feta cheese and tomatoes and mix together to form pasta sauce. Pour cooked noodles in baking dish and use spoon to toss to coat noodles evenly. Use additional basil to top as garnish when served.
